  Laid in a toasted biscotti cookie crust, this lemon cheesecake includes a layer of tangy lemon filling and is topped off with lemon sour cream and coconut.  While best when enjoyed with sunshine, the Lemon Biscotti Cheesecake can bring thoughts of spring even in the dead of winter.  At 1.5lbs, the cake comes in 8 slices; some cakes may have a swirled design in the topping, instead of the fluting pictured here.
