A Cheesy History: The Evolution of Cheesecake

Often times we don’t bother to think about the fascinating origins of some of today’s most common things.  Everything around us has a history with its evolution from an idea to the product that we have today.  One thing that has some of the most interesting history is of the foods that we eat.  Many of the foods that we eat come from a fascinating ancient recipe and tradition.  No stranger to this unique history is on of America’s favorite desserts: cheesecake.

Many people know their cheesecake as the popular New York Cheesecake, so it might be surprising to find out that the earliest record of this tasty dessert is from Ancient Greece.  This delicious treat was actually a food given to athletes during the first Olympic games held in 776 B.C.E. on the Isle of Delos.  Just think, every time you indulge in a helping of cheesecake you’re taking part in an ancient tradition that only the strongest and bravest could take part in.

One of the trickiest parts of cheesecakes today, is coming up with that perfect recipe.  There are different kinds of recipes for cheesecake, each with their own unique taste; most popular are probably the American cream cheese, New York, and Chicago styles, among dozens of others.  The search for the perfect recipe for cheesecake has been going on since the ancient times too.  The earliest record of this recipe is from a Roman politician, Marcus Cato almost 600 years after the first Olympics.  Cato published his recipe in his book De Agricultura, a book that explained farming and cooking.  His cheesecake, called libum, was a small sweet cake that was meant as a temple offering. 

Since Cato, the cheesecake has gone through hundreds of transformations and styles.  After the Romans conquered Greece, they continued throughout the rest of Europe and brought the delicious cheesecake with them.  And since then, the different cultures have tried to perfect the art of making cheesecakes based on their culture’s tastes and traditions.  The cheesecake and its popularity traveled around the world and eventually made its way to America.

Good ol’ fashioned American cheesecake is probably one of the most popular types of cheesecakes around today, made primarily with cream cheese.  So, it may be shocking to learn that when you’re eating this dessert, you’re actually taking part in a French style of the famous dessert.  In the late 19^th century, American dairymen duplicated the French recipe for Neufchatel Cheese, and discovered a way to make rich and creamy cheese they called cream cheese.  A few decades later, James Kraft perfect the process and the rest is history as America continues to indulge themselves in the delicious dessert made from Philadelphia Cream Cheese.

Cheesecake has definitely gone through a unique and long evolution from its original creation back in Ancient Greece.  It’s amazing to think how long the process has come and that cheesecake remains to be one of the most popular desserts in America.  And just think that every time you cook or bite into that creamy dessert, you too are taking a part in its incredible history.
